I tried Joe Wick’s trending masala omelette recipe and now it’s my favorite high-protein breakfast

This high-protein breakfast is a winner

Those who know me know I’m obsessed with eggs—they even buy more when I come to stay because I eat so many. My staple weekday breakfast for the last few months has been scrambled tofu and eggs with a sprinkling of flaxseeds and soy sauce, but it’s starting to get boring and I’ve been looking for a high-protein alternative.

So when I saw this trending masala omelette recipe by certified trainer Joe Wicks I was keen to try it out. I’ve got most of Wicks’s cookbooks and some of his Lean in 15 recipes are still my absolute favorites, so I had a hunch this masala omelette was going to be good, too. Here’s how to make it and what I discovered.

It’s very quick to make

For anyone who says they don’t have time to make a decent breakfast, this is your answer. It took less than five minutes to make and it tasted so good that it’s my new favorite breakfast.

Plus, a savoury breakfast is better for blood sugar control than a sweet one because it tends to be easier for the body to digest and offers a slow release of energy. This means you are less likely to have that blood sugar crash that can follow a sugary start to the day.

It kept me full until lunchtime

This omelette contains four eggs (that’s 24 grams of protein, not quite 30g of protein for breakfast, but close), as well as red onions (full of antioxidants, as well as vitamin C) and iron-rich spinach, making it a highly nutritious start to your day.

I love the hint of curry from the masala paste, and the added cheese gives an extra protein hit. I also found the fresh, crunchy tomato, onion and coriander side salad perfectly complemented the mango chutney.

It’s also a great lunch option—and super energizing

If you’re looking for a filling, nutritious and high-protein lunch you can’t go wrong with eggs.

This recipe took me back to when I was hiking in Nepal in my thirties and we’d stop at these remote wooden huts where our lovely guide would prepare us a fresh masala omelette for lunch.

Packed with protein, it was the energy boost I needed to finish an afternoon of hiking in the Himalayan mountains.
